Mrs. Hillary's Apple Crumble🍏

I am an avid fan of children’s literature and I love finding recipes that compliment our favorite books. The Gruffalo by Julia Donaldson is a favorite at my house; and Mouse’s favorite food (Gruffalo crumble) was begging to be made.


In the time it takes you to preheat the oven, you can have this recipe ready to go in it. Aside from the apples, this recipe uses pantry staples to get something special on the table in barely any time at all.


Mrs. Hillary's Apple Crumble🍏

Makes one 9x13 dish

(about 8-10 servings)


Crumble Topping:

  • 1 cup all purpose flour

  • 3/4 cup brown sugar

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • ½ teaspoon ground cinnamon

  • 1 stick unsalted butter melted


Filling:

  • 2 ½ pounds Granny Smith apples peeled, cored, and diced into bite sized pieces (about 6 to 7 cups)

  • ½ cup brown sugar

  • 1 tablespoon lemon juice

  • 2 tablespoons cornstarch (all purpose flour works too)

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon


Directions

1. Preheat your oven to 375°F. Chop the apples (or better yet, let the kids practice their chopping skills with these kid safe knives).

2. Make the topping. In a medium bowl combine flour, brown sugar, salt, baking powder and cinnamon. Whisk to combine. Add melted butter and mix with a fork until crumbly.

3. Make the filling. In a large bowl, combine apples, brown sugar, lemon juice, cornstarch, and ground cinnamon.

4. Transfer the filling into a greased 9x13 casserole dish and spread into an even layer.

5. Sprinkle the crumble topping over the top.

6. Bake for 35-40 minutes until golden brown on top.


Best served warm with whipped cream or "owl ice cream” on top while reading The Gruffalo with your little ones.
